A staple of New Orleans coffee culture. Chicory was mixed with coffee to stretch out the supply during times of coffee shortages such as during the American Civil War. Louisianans looked to adding chicory root to their coffee when Union naval blockades cut off the port of New Orleans. Chicory coffee was also cheap and therefore used during economic crisis such as the Great Depression. But if you ask a New Orleans native, it’s all about the tradition.
